1 8 oz. pack pancit bihon noodles
1 onion, diced
3 cloves of garlic, minced
1/4 cabbage, sliced into strips
1/3 cup scallions, cut into pieces
1 carrot, sliced into strips
3/4 cup diced celery
3 tablespoons soy sauce
salt and pepper to taste
2 tablespoons of cooking oil
1 cooked chicken breast, (boiled for 1 hour)shredded
2 cups of chicken broth or 2 chicken bouillon cubes dissolved in 2 cups
of water
Here's How:
Soak the pansit noodles for about 5 to 10 minutes to soften. In a wok, saute garlic and onions with oil. Add the chicken broth, chicken breast and carrots until cooked. Add the cabbage and cook for about 5 minutes (if you want it half cooked) but you may cook it longer if you prefer it cooked more thoroughly. Add the pansit bihon noodles and soy sauce and cook for about 5 minutes until the noodles are soft. Salt and pepper to taste. You can serve it with calamansi. Just squeeze it into the pansit and stir into the noodles.

Pansit is one of the influence brought by the Chinese in the Philippines. Over the years, pansit has several ways of how to cook and the addition of seasoning what makes pansit a more delicious food in the table. I've been tried several version of pansit bihon and I guess this food deserves 90% of my ratings. "Kung ang mga Ilonggo pa dapat magkaon gid sng pansit kay por long lyp."
